Perfect balance between naturally expressed acids and sugar further emphasizes the graceful gait of the palate. The aromatic complex (citrus fruits, nectarines, petroleum flakes) is enriched with fine minerality and a discrete botrytis (noble mold) that concentrates the flavors with a touch of tropical fruit and honey notes. It is rich and structured. Layered on the nose with refreshing citrus, lemon and lime, a cooler climate signature with a wonderful mineral, salty experience is felt. Robert Kopjar adds that from harvest to harvest, the smaller part of the Riesling grape in the vineyard is also captured by the noble botrytis, which further enriches the structure and the aroma of the wine. In this desirable process, the grapes concentrate the flavors, aromas and sweetness in the dried berry without losing the acids and giving the wine quite specific notes. This small proportion of concentrated aromas in this Riesling, rounds out the whole impression of wine, making it richer and at the same time very simply drinkable.

Food pairing: asian food, grilled prawns, and soft cheese.

Kopjar Winery has positioned itself at the very top of the Croatian wine scene in a short time. Vineyards (some old plots and the rest planted in 2005) are fully nourished according to environmental considerations, while the owner, Mr. Robert Kopjar, joined the whole project in 2012.

By fully maintaining organic principle, the share of human labor is many times higher and the protection of the vine is much more demanding, but at the end, the result is high quality grapes that produce authentic, complex wines with a pronounced sense of terroir.

Vineyards (southern and southeastern exposures located at 250-260 m.v.v.) and wine cellar are located at the very edge of Varazdin County, on the border with Krapina Zagorje County in Pece. The 4.5ha of its own plantations (approx. 22,000 grapevines) are predominantly white. Yield reduction (green harvesting) is a regular measure and most wines are hold for a long time on fine lees in stainless steel tanks or large oak barrels.
